Pina Colada
Makes 2 Servings 1 1/2 cups Fresh Pineapple, cut to 1inch chunks Freeze until firm, ~3 hours 3 oz Light rum 2 oz Coco Lopez Sweetened Cream of Coconut 6 oz Pineapple Juice 1/2 oz Fresh Lime Juice 2 cups ice Blend with frozen pineapple until smooth 2 Highball or Hurricane Glasses Split blended mixture between two hurricane glasses 2 oz Aged rum Float 1 oz of rum atop each glass Brandied Cherry (e.g. Luxardo Maraschino) Pineapple Leaves Pineapple Wedges Garnish
